Tea leaves destined to become oolong teas are “bruised” to release the polphenol oxidase present. They are also allowed to ferment for less time than black teas before being heated and dried. Antioxidants such as catechin, theaflavin and thearubigin in oolong teas are generally at a level between unfermented green and white teas as well as completely fermented black teas.
